Holiday Blondie Bars

Whether you’re into blondes or brunettes, we can all agree on the greatness of a Blondie Bar. Overwhelmingly delicious and incredibly sweet, these sugary bars are best saved for special occasions, like the holidays.
This year, I decided to make my own version of Blondie Bars—called Holiday Blondie Bars—as a little treat for my friends and family. Like any true blonde, they’re comprised of a ton of great stuff, wrapped up into one golden bombshell. (Yes, this is written by a blonde.)

What You Need (for the Bars):
3/4 cup unsalted butter, softened
1 1/2 cup brown sugar
1/3 cup sugar
2 eggs
2 teaspoons pure vanilla extract
2 cups all-purpose flour
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
1 1/2 cups white chocolate chips
1/2 cup butterscotch chips

What You Need (for the frosting):
1/2 cup unsalted butter, softened
1 1/2 cup confectioners sugar
1 teaspoon pure vanilla extract vanilla
2 Tablespoons milk

And don’t forget the Golden Oreos! A little warning: You will need the entire package of Oreos. In other words, if you snack on them, you won’t have enough to cover all the bars. Trust.

What to Do:
1. Preheat oven to 350°F, lay a piece of parchment paper at the bottom of a 9 x 9″ pan, and coat the sides with butter. In a large bowl, mix butter, brown sugar and sugar.

2. Beat in the eggs and vanilla extract.

3. In a small bowl, whisk the flour, baking soda and kosher salt, then pour it into the wet mixture in batches, mixing as you go.

4. Mix in the white chocolate chips and butterscotch chips.

5. Separate the batter into two sections and spread one portion into the baking pan.

6. Bake for 25 minutes, let cool for 15, and then repeat with the second half of the batter.

7. While the Blondies are baking, you can make the frosting. Simply beat the unsalted butter, powdered sugar, vanilla and milk in a medium-sized bowl.

8. When cooled, cut them it into 16 squares.

9. Spread the frosting over the Blondies.

10. Place the crumbled Golden Oreos on top and press them down lightly to ensure they stay put.

Package them in pretty little bags, and you’ve got the perfect, sweetest holiday treat.
